Lontong Sayur (Rice Cake in Veggie Chicken Curry)

Kali ini saya mau share resep lontong sayur. Kalau di Singapura, makanan ini cukup disebut lontong aja. Saya nda ngepost resep lontongnya, tapi bakal saya post di postingan berikutnya, InsyaaAllah. Yuk, cekidot!

Bahan:

  • 1/2 ekor ayam
  • 2 gelas air
  • 2 gelas santan
  • 3 lembar daun jeruk purut
  • 2 lembar daun salam
  • 4 sdm minyak goreng untuk menumis
  • Gula dan garam secukupnya
  • 1 buah wortel, iris tipis
  • 1 ikat buncis, potong sesuai selera

Bahan yang dihaluskan:

  • 8 siung bawang putih
  • 16 siung bawang merah
  • 5 cm lengkuas
  • 2 cm kencur
  • 1/4 sdt jahe bubuk
  • 1/2 sdt merica bubuk
  • 1 sdt biji ketumbar
  • 1/4 sdt jinten bubuk
  • 4 butir kemiri
  • 1/2 sdt kunyit bubuk

Bahan pelengkap:

  • Bawang merah gorengĀ  dan serundeng sebagai taburan

Cara Membuat:

  1. Bersihkan ayam, kemudian potong-potong menjadi 10 atau 12 bagian.
  2. Rebus ayam hingga setengah matang, lalu sisihkan. Jangan buang air kaldunya karena akan digunakan saat memasak nanti
  3. Panaskan minyak goreng dalam wajan. MasukkanĀ bumbu halus, daun jeruk purut, dan daun salam, kemudian tumis hingga harum
  4. Masukkan ayam yang sudah direbus tadi, lalu aduk-aduk sebentar hingga bumbu merata di semua bagian daging ayam
  5. Tuang 2 gelas santan beserta kaldu ayam
  6. Tambahkan gula garam sebagai perasa
  7. Masukkan wortel dan buncis. Rebus hingga ayam dan sayurnya menjadi empuk dan matang
  8. Setelah matang, angkat, dan sajikan di piring saji
  9. Sajian semakin lengkap dengan taburan bawang goreng dan serundeng di atasnya

 

Recipe in English

Ingredients:

  • half chicken
  • 2 glass coconut milk
  • 2 glass water
  • 3 pcs kaffir lime leaf
  • 2 pcs Indonesian bay leaf
  • 4 tbsp frying oil
  • Sugar and salt
  • 1 carrot, thin slice
  • 10 beans, cut every 1cm

Mashed Ingredients:

  • 8 cloves garlic
  • 16 cloves onion
  • 5 cm thick sliceĀ galangal
  • 2 cm thick slice kaempferia galanga
  • 1/4 tsp ginger powder
  • 1/2 tsp whiteĀ pepper powder
  • 1 tsp coriander seeds
  • 1/4 tsp cumin powder
  • 4 candlenuts
  • 1/2 tsp tumeric powder

Supplement Ingredients:

  • Fried onion flakes and shredded coconut as topping

Directions:

  1. Clean the chicken, then cut it into 10 or 12 pieces
  2. Boil the chicken ’till half-cooked. Do not throw away the boiled chicken water because we’re going to use it later
  3. Heat the frying oil on a fry pan. Put mashed ingredients, kaffir lime, andĀ Indonesian bay leaves into the pan, then stir until fragrant
  4. Put the chunks of chicken into fry pan. Stir a bit until all chunks of chicken is covered by the ingredients
  5. Discard 2 glass of coconut milk and the boiled chicken water.
  6. Add some salt and sugar
  7. Add carrot and bean. Bring to a boil until the chicken and the vegetable are tender and cooked well
  8. After it is cooked well, then transfer it to a serving plate
  9. Serve it with fried onion flakes and shredded coconut as its topping
